Belize – Wednesday 12/2

Wednesday morning was beautiful. Nick and I decided to dive today, so we headed down to the dock with cklahr at 8:50 a.m.

After the dives we ate lunch and had drinks poolside again. This time I opted for the chicken quesadillas. Somehow we ordered double of Curtis’s shrimp ‘dillas, so I ate one of those and gave Nick two of mine.

We chilled poolside for the rest of the day. My face got a little toasty.

For dinner we ventured to El Patio, one of my favorite restaurants here. Nick wasn’t going to join us for dinner because he was feeling sick after his and Kristen’s crossfit workout so we left without him, but he later changed his mind and met us at the restaurant.

Belize – Tuesday 12/1

Nick and I opted out of diving today. I wanted a relaxation day, and since whenever the trips are over I always regret not taking more days off diving instead of diving more, that’s what I did. My intention was to hide away in the air conditioned room and shady balcony, but I can’t resist an empty pool. I was down by the pool by 9:30 a.m. and didn’t come inside until cklahr came back from diving at 12:30. Of course they went somewhere new where the lionfish were a plenty.

In the afternoon we headed north per Nick’s request. We never head that direction as town is south of us, so it was an adventure. We found one of the two CrossFit gyms on the caye and ran into Loidy, who sadly is no longer with Island Divers. For lunch we at at the Sand Bar. I had shrimp tacos, surprise, surprise. I also talked Kristen into a third drink. Best decision ever.

Rudy invited us to the dive shop for lionfish ceviche. We decided the best course of action would be to rent a golf cart; that way we could enjoy dinner at a faraway place south near the dive shop and not have to rely on taxis.

The ceviche was delicious and we spent the early afternoon in good company. For dinner we went to Casa Picasso, a restaurant recommended to us by our taxi driver from the airport. It was off the beaten path and behind some sort of shipping hub for what looked like all the bottled water on the island. I ordered mahimahi and banana wantons for dessert. Kristen and I also tried a wine we’d never heard of. Unfortunately I don’t remember what it was called, but it was good.

The rain got us on the way back to the resort, so we put up the windshield and hunkered down. Since the drive got me wet, I ventured to the pool while it was still raining. A perfect ending to a perfect day.

Belize – Monday 11/30

November 30, 2015

Monday played out much like Sunday. Dives in the morning, poolside lunch. For dinner we went to Fido’s, and for dessert we went to Yo Mama Frozen Yogurt Bar.

Belize – Sunday 11/29

November 29, 2015

The ocean looked much calmer on Sunday, so all of us went diving in the morning. For lunch we ate at the pool. We made the walk to Blue Water Grill for dinner, as two of the places we wanted to go to were closed Sundays. I had the angel hair seafood pasta. Note to self: next time order one of the fish platters even though the flavors sound scary.

Belize – Saturday 11/28

November 28, 2015

In the morning the skies were overcast and the seas looked rough. Kristen, Nick, and I decided to skip out on the dive while Curtis decided to brave the seas. As it turned out, Rudy ended up delaying the dive until 1 p.m. due to inclement weather conditions.

I hit the pool around 8:30 a.m. and Curtis joined me shortly thereafter. We were the only ones until another couple came down and took a bunch of chairs by us, leaving us with one extra. We ended up moving to the other side of the pool to get more chairs and getting an umbrella because it was hot and my forehead was toasty from the day before.

I ordered a few Island Coolers and pre lunch ceviche. The boys left at 1 p.m. to dive, and Kristen abandoned me to get a massage. Out of fear of burning, I headed back to the room until Kristen got back. We ended up walking down the beach and having lunch at Estel’s. I had a chicken quesadilla. Kristen had french toast which seemed really weird to me.

On our way back from lunch the sky looked ominious and a rainbow formed over the ocean. We made it back before the rain came.

We were all pretty tuckered out in the evening, so we ordered pizza and watched Ted 2.

The interwebs are actually working tonight! While everyone else is in bed at 9 p.m., I’m sitting here uploading photos to the blog.
